Question: I recently got my first horse and she hasn't been ridden in a little over a year. How should I handle this if I want to ride her someday?

I was just wondering if anyone else has experienced what it is like to reintroduce riding again to a horse and if anybody has any tips. I'm going to slowly put tack on her and see how she responds but I have no idea. She used to be a brood mare and had four foals but has ridden after her last one I believe. Also I recently discovered she likes to nudge me in my pocket (where the carrots are) and tries to lick my clothes and try and nibble on my hair. How should I stop this? It doesn't bother me, I just move her head away and she'll stay away for a little while. I'm not even sure if I should stop it. Also, any tips for a first time horse owner would be fine! I am almost 15 and have had some lessons so this is pretty new to me.
