Creating Training Schedule?

It has been some time since my horse has been on a regular, consistent riding schedule. Well, to be honest... I don't know if he ever has. Before I bought him in March, he was a pasture horse for 6 months, due to injury. Before the injury, he was a lesson and trail horse. He went on trails when need, and was a camp horse when needed (at least once a month, every week during summer). So, I guess he has never been on an actual tuning up, or keeping fit workout schedule. And, I don't know how to create one. I want to start working with him, consistently in the new year because a new year goal is to be the best owner I can be. How can I be a good owner, letting him get tight and fat in the stall? Maybe he doesn't mind, but it won't help much down the road! So, things I want to work on: -bonding -suppleness (easy movement and bending -ground manners -in-saddle manners -lunging -voice commands -building stamina -strengthen muscles -filling out backbone -gait transitioning SOOO, basically anything and everything! He really just need some work. So, if you would create a schedule or give me some tips as to starting back up. He really hasn't been worked on in FOREVER... Also, tips on lunging? He only goes one way, and I cannot get him going the other way! Ok thanks so much
