My dog started nipping at strangers after dog bite...?

I adopted a five year old malti-poo almost a year ago. She is timid and required more socialization. I took her to training classes, and regularly take her out for long walks where there are many people and other dogs and she was doing great. When people were at the house, she would do the usual barking, but would later relax and was well-behaved. About a month ago, we were walking her and one of the neighbors came out of his home with two dogs that were off-leash. They ran out into the street and one them bit my dog. She had to have a drain put in and almost half of her neck was cut open to get the infection out. (We had taken her to the vet, but he wanted to try antibiotics for a couple of days first to see if surgery wouldn't be necessary.) A few weeks after the surgery, my boyfriend took her to a friends house and told me that she grabbed on to the bottom of his pants with her teeth for a second or so and walked away. She had never done this before, so I told him if it happened again to correct her at least with a "no." This past Saturday, we had people over and she tried to nip at two of the men's pants. I gave a firm "no" and kept her separated for most of night because there was also a child here and didn't want "see" what would happen. After most of the people left, I let her back out and she was fine. She doesn't growl or bark, but I know it's happening out of fear and I don't want it to escalate. Other than "time outs," is there anything else I can do to prevent it? She was doing so well, and I can only think this is related to the dog bite. Thanks!
