Question: Husky cross Border Collie puppy is more interested in the environment than me.?

I have a soon to be 14 weeks old Husky cross Border Collie. I walk him everyday 3 to 5 hours. In the streets and city centers I walk him on a leash, switching from neck collar to harness with a long leash, so he gets used to wichever way I want him to walk. But when we walk on fields and in woods, I let him run off leash. Now, I have to let him off leash, so he gets his own amount of running around. This pups energy level is allready a challenge. He does stay next to me and never goes far away from me. But the problem is that he eats everything of the floor. Either he eats probably scented leaves, dead corpses of mice or birds (which really frustrates me) and chewes on sticks and eats them or he is licking something off the ground. Then, he finds something like tissues (those he actually eats) or plastic or whatever picks it up and goes running with it. When I try to get it from him, meaning I call him to come to me (his recall is 80%) he won't. As soon as he sees me stepping towards him he runs away a few meters. Now, I never run after him, I just proceed my way an he comes after right away. Only if he finds food, then I loose. I loose big time. He will only come when he sees me going away, but still with whatever he has in his mouth. I know he is still very young, but will he stop doing that or do I have to teach him? I already taught him leave it techniqe, which works, but when we get outside, nope, forget it. What else can I do to prevent this?
