How do i catch a pet rat from my kitchen?

Ok so a couple of months ago my next door neighbour moved out but i noticed they had left their caged rat in the living room when i passed the window, a couple weeks later i heard scratching in the kitchen and then my dog had something trapped under the fridge, i put my hand under to see what he had found and a rat poked its head out and then ran under my feet and hid under the stairs, removing the things from under the stairs one by one i saw the rat jump a good 3 feet off the air to avoid me, and it disappeared, i've seen it a couple of times but only when my dog isn't around, it is white and brown so i know it is a pet rat and it must have escaped from next door when the movers were taking what was left in the house. I have tried everything to get rid of it, humane traps ( i didn't want to harm it at first ) and then it blew the electrics by chewing through wires in the walls, so i bought snap traps ( wooden ones and heavy duty plastic ones ) using peanut butter, jam, crackers, chocolate and cheese as bait but nothing is attracting it, i have also placed poison down ( seroxa ) but to no avail. Is there anything else i can try? I wont let the dog in the kitchen as he might get his nose caught in a trap or eat some of the poison. As far as i can tell it is behind my cooker but it is a built in one so i can't just take it out, i am removing all of the droppings and everything it could use to make a nest, i have tried spraying detergent to deter it and also bleach as i know they dislike the scent but it's determined on staying, Please any suggestions will be helpful i've run out of ideas on what to do and the pest control is going to cost £300 at least
